Curry Drums

The Delight in Delightful.

What is so delightful about this recipe is that it could not have ever been made without my Facebook friend from another continent. I remember the Skype conversation clearly as she explained Americans do not know how to cook Indian food. Specifically, we do not burn the curry before we put the chicken in the frying plan. So with those minimal instructions, I set out to cook the perfect curry wings. Not only do I love them but so does everyone who tries them. They are also very easy to make, quick, and relatively inexpensive. After months and months of enjoying this sumptuous treat I have decided to share my recipe with my Hubpage followers. After all it is the season of giving and this is the best non-traditional recipe I can share this Holiday Season.

Prep

Pour about a tablespoon of Sesame oil in the pan along with about a teaspoon of curry and ¼ teaspoon of turmeric. Crush the garlic cloves and place them in the pan as well. Heat oil on Medium low until you can smell the curry burning in your home. My home smells like an Indian restaurant we eat this so often.

In the meantime, juice your lemon and set aside all your ingredients. When your wings are finished cooking you will want to season them quickly while they are hot. That way you can eat them warm.

Cooking

Once you have burned the curry (and turmeric) to the point you can smell it through your home, add in the chicken. Then cover the pan. This is important so your chicken gets crispy but does not dry out. Let the chicken cook. I allow about 7 minutes on both sides but this will vary based on the type of chicken you are cooking and the stove. The rule is let it get very crisp on the outside. I also check my garlic cloves. If they are not cooked then I know my chicken is not. Turn chicken once and cover to finish cooking. In all honesty if this is your first time cooking with sesame oil or this type of chicken it takes time to learn the exact timing. No two chickens are alike, so let me qualify ideally only turn once. When finished set aside on a paper towel to let the oil drain out. In the South we cook with oil but it amazes me that no one ever talks about how we also make certain to drain all the oil out of what we cook. Oil is only a medium for cooking for us and not an ordinary dietary supplement.

Hmmm! If You Could Only Smell It!

Seasoning Your Chicken Wings

Once the oil is drained from the chicken set it aside on a plate. Coat with lemon juice, add ground pepper to taste, cayenne pepper to taste and garlic salt to taste. In addition, I add parsley if I am having guests over. Tonight I have no guests so no parsley. You can serve with a side of rice or celery and blue cheese but I can eat these straight.

Messing Up The Delightful American Chicken Curry Wings

You really can’t. If you follow these simple instructions and keep the temperature on medium low then they should be fine. It is important to remember to keep the lid on and not turn the chicken wings too much. It really is that simple and that is what makes them so delightful…the simplicity.

Delightful Endings

Delight comes in many forms. This is a one pan recipe. That is all you have to clean up.

Delightful American Chicken Curry Wings are delightful especially on snowy winter days during football games. You will surprise your guests at your talent at cooking chicken curry wings all the while knowing you haven’t put a great deal of effort into their meal. I have been asked on occasion if I would allow a child to eat them. As many are aware I have a child with Autism. He is a picky eater. For some reason he loves these wings. Tonight’s batch is drums which are features in the pictures here. It is the first time I have ever cooked drums. I will be lucky if I get one. My son devours the entire lot whenever I cook them. Right now he is finishing off the venison from last night. Maybe I will get two drums?

There is a very long boring biochemical explanation as to why curry wings do not cause my son further stomach problems which I will spare you. It has to do which combining strong acids with weak ones. Suffices to say it works well. My son stomach problems if anything have improved over the last several months. I am not saying the wings have help his stomach but what I am saying is that I am confident children can safely eat them.

I hope you enjoy this Delightful American Chicken Curry. I would love to hear about your experiences making this recipe and if you love it as much as we do. Happy Holidays from our family to yours in this very non-traditional holiday recipe.
