Corn Salad Recipe

If you haven't noticed I have been on a writing rampage and as such I have skipped a few meals. Good for the waist line but occasionally I write hubs about food because I am a bit hungry. In particular, I have been craving corn salad today. It is the perfect treat for the summer and I eat it s a meal but it can be used as a side dish at a BBQ. I can't remember if this is a recipe but I doubt it because I never follow recipes.

I make this when we have left over corn on the cob. I just cut the corn off the cob and set it aside. For this recipe I require atleast four cobs of corn cooked. If you want to cheat you can buy frozen in corn in a bag and let it defrost. I don't think it is as good but it is easier if you don't have extra corn on the cob lying around. You can also put most of these ingredients right out of your home garden.

This is one of my favorite salads of all time and it is really good on those days it is too hot to even eat. I eat it in the winter but perhaps that is because we live in Floirda and it is warm all year around.


Ingredients

  • 4- 6 corn on the cobs with the corn cut off.
  • 1- shallot sliced thinly
  • 5-green onions
  • 1-box of cherry tomates washed and halved. (Sometimes I use ugly Tomatoes becuase I think they have better flavor.).
  • 15 leaves of fresh basil washed.
  • 3/4 cup - oil either olive or safflower
  • 2- tablespoons of balsamic vinegar
  • Salt to taste
  • Pepper to taste

***Occassionally I throw in cayenne pepper to spice it up***

Throw all the ingredients in a bowl and toss like a salad. I put it in a ziploc bag and it lasts about a week. It is as really good side dish to serve at the BBQ because it can be made in advance. Serve chilled and it is absolutley awesome.

Your corn salad can be a reflection of your personality. There is no wrong way to make corn salad. Just add your favorite ingredients, be creative as your would like, and dazzle your own taste buds. In Conclusion

Corn salad is a wonderful summer treat which is rich in vitamins and full of fiber. Fiber is great to keep the popes clean. It is perfect for those hot Summer days. It makes an excellent side dish for your Summer BBQ especially since you can prepare it in advance.

Not only is this an awesome treat to eat but it is so easy to make. The salad lasts about a week in the refrigerator. Again I eat the salad as a meal but when invited to BBQ, I bring this salad and it impresses my friends.
